Thai Coconut Curried Tuna Strangewiches

Ingredients

  • COCONUT CURRIED TUNA SALAD:
  • 2 cans (12 oz.) solid white albacore tuna in water, drained
  • 1/4 cup cream of coconut, (cream scraped from top of can, discard liquid)
  • 1/4 cup Hellmann's® or Best Foods® Real Mayonnaise
  • Grated peel and juice of 1 lime
  • 2 Tbsp. red curry paste or green curry paste
  • 2 Tbsp. flaked coconut or shaved coconut
  • 1 shallot, minced
  • 1 Tbsp. rice vinegar
  • 2 cloves garlic, minced
  • 1 Tbsp. chopped fresh Thai basil leaves
  • 1 Tbsp. chopped fresh mint leaves
  • 1 Tbsp. , chopped fresh cilantro leaves
  • 2 tsp. soy sauce
  • 1 tsp. fish sauce
  • THAI CHILI SLAW:
  • 1 cup sliced savoy cabbage or napa cabbage
  • 1 cup sliced red cabbage
  • 1/2 cup grated carrots
  • 1/2 cup sliced red bell pepper
  • 3 green onions, sliced
  • Juice from 2 limes
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup chopped fresh Thai basil leaves
  • 2 Tbsp. toasted sesame oil
  • 1 Thai bird chili pepper or jalapeno pepper, sliced thin
  • 1 Tbsp. grated fresh ginger
  • LIME SALTED FRIED PEANUTS:
  • 2 cups raw unsalted peanuts
  • 1/4 cup fresh lime juice
  • 1 Tbsp. fish sauce
  • Vegetable oil for frying
  • Salt
  • TO SERVE:
  • 4 large tortillas or wraps
  • Thai Peanut Sauce

Directions

  1. For Coconut Curried Tuna Salad, combine all ingredients in bowl. Cover and refrigerate up to 24 hours.
  2. For Thai Chili Slaw, combine all ingredients in bowl. Cover and refrigerate.
  3. For Lime Salted Fried Peanuts, soak peanuts in lime juice and fish sauce for 45 minutes to 1 hour. Drain and dry with paper towels. Heat 2-inches oil in cast iron pan until 350°. Fry peanuts until crispy. Season with salt.
  4. To Serve, divide tuna salad and slaw amongst tortillas. Top with roughly chopped peanuts and serve with peanut sauce for dipping.
