Juicy Veggie Burgers

Ingredients

  • 1/2 cup dried lentils
  • 1 tsp. PLUS 1 Tbsp. vegetable oil, divided
  • 1 onion, coarsely chopped
  • 1/4 cup PLUS 4 tsp. Hellmann's® or Best Foods® Organic Chipotle Mayonnaise
  • 1/4 cup fresh parsley leaves
  • 1 carrot, coarsely chopped
  • 1 large egg
  • 1 clove garlic
  • 1/4 tsp. salt
  • 1 cup panko bread crumbs
  • 6 hamburger buns, split
  • 1 large beefsteak tomato, sliced
  • 3 cups baby arugula or torn lettuce leaves

Directions

  1. Cook lentils according to package directions; drain and cool completely.
  2. Heat 1 teaspoon oil in large nonstick skillet over medium-high heat and cook onion, stirring occasionally, until golden and tender, about 5 minutes. Remove from heat and cool completely.
  3. Put onions, 1/4 cup Hellmann's® or Best Foods® Organic Chipotle Mayonnaise, parsley, carrot, egg, garlic, salt and half the lentils in food processor. Pulse until finely chopped.
  4. Pour into medium bowl; stir in remaining lentils and bread crumbs. Form into 6 patties with slightly wet hands.
  5. Heat remaining 1 tablespoon oil in large nonstick skillet over medium-high heat and cook patties, turning once, until golden, about 2 to 3 minutes on each side.
  6. Spread remaining 4 teaspoons Mayonnaise on bun bottoms. Top with patties, tomato slices, arugula and bun tops.
