This fresh and colorful rice salad recipe with chicken and Hellmann's® or Best Foods® Real Mayonnaise is perfect for picnics, BBQs and as a side dish to grilled food.

Ingredients

  • 1/2 cup Hellmann's® or Best Foods® Real Mayonnaise
  • 1/4 cup milk
  • 2 cups shredded cooked chicken
  • 1 small tomato, chopped
  • 1/2 small red onion, thinly sliced
  • 2 hard-cooked eggs, chopped (optional)
  • 1/4 cup whole kernel corn
  • 1/4 cup fresh parsley leaves, chopped
  • 1 package Knorr® Rice Sides™ - Rice Pilaf, prepared according to package directions and cooled slightly

Directions

  1. Blend Hellmann's® or Best Foods® Real Mayonnaise with milk. Stir in remaining ingredients and season, if desired, with salt and ground black pepper.
