Asparagus Salad with Tuna Dressing

  • 2 lbs. jumbo asparagus, ends trimmed (set aside 2 spears)
  • Grated peel and juice of 1 lemon
  • Grated peel of 1 orange
  • 2 cloves garlic, minced
  • 2 Tbsp. finely chopped Italian parsley
  • 1 cup Hellmann's® or Best Foods® Mayonnaise Dressing with Olive Oil
  • 1/2 can light tuna packed in water, drained and flaked
  • 2 Tbsp. olive oil
  • Lemon wedge
  • 1 tsp. coarse sea salt


  1. Bring 4 quarts of water to a boil in a large pot, and add 3 tablespoons salt. Add all but 2 asparagus spears and cook until crisp-tender, about 1 ½ minutes. Drain and rinse with cold running water until cool; drain on paper towels.
  2. Arrange cooked asparagus on serving platter. In mixing bowl stir together lemon peel and juice, orange peel, garlic, parsley, Hellmann's® or Best Foods® Mayonnaise Dressing with Olive Oil and tuna and mix gently to form a creamy sauce. Spoon over asparagus. Shave uncooked spears with a vegetable peeler and toss with olive oil and a squeeze of lemon. Arrange over top of asparagus.Sprinkle with sea salt.
