Vegetarian Wrap

Ingredients

  • 2 Tbsp. olive oil, divided
  • 1 medium yellow onion, sliced
  • 1 red bell pepper
  • 1 sun-dried tomato tortilla, warmed
  • 2 Tbsp. Hellmann's® or Best Foods® Real Mayonnaise
  • 2 cups mixed salad greens
  • 1 Tbsp. chopped fresh herbs
  • 3 ounces goat cheese

Directions

  1. Heat 1 Tbsp. oil in large nonstick skillet over medium heat and cook onion, stirring frequently, until golden brown and tender.
  2. Preheat oven to 400°. Arrange red bell pepper on baking sheet, then drizzle with remaining 1 Tbsp oil. Roast until skin is blackened, turning pepper occasionally. Put roasted pepper in plastic bag; seal bag and let stand 10 minutes. Remove skin and seeds from pepper, then slice into strips.
  3. Spread tortilla with Hellmann's® or Best Foods® Real Mayonnaise, then top with greens in middle. Sprinkle with herbs, then crumbled goat cheese, onions and roasted pepper. Roll up tightly, tucking in ends. Cut in half or into bite-sizes slices.
