Roasted Vegetable Panini

  • 1 cup sliced assorted seasonal vegetables
  • Balsamic vinegar
  • Extra virgin olive oil
  • Salt and ground black pepper to taste
  • 1 piece herb-topped focaccia, split
  • 2 Tbsp. Hellmann's® or Best Foods® Real Mayonnaise
  • 3 ounces soft goat cheese
  • 5 fresh basil leaves


  1. Drizzle vegetables with vinegar, oil and salt and pepper to taste. Grill until tender.
  2. Preheat oven to 350°. Spread focaccia with Hellmann's® or Best Foods® Real Mayonnaise. Heat a heavy skillet over medium heat. Top focaccia bottom with grilled vegetables, crumbled goat cheese, basil leaves, then focaccia top.
  3. Put sandwich in heated skillet. If possible, weight sandwich down with another skillet. Place in oven and bake until hot, about 5 minutes.
