  1. Combine all ingredients in medium bowl. Season, if desired, with salt and ground black pepper and serve on lettuce leaves. Chill, if desired.

Variation: For Chicken Salad Sandwich Wheels, prepare chicken salad as above. Cut 12 slices whole wheat bread into 3-1/2-inch rounds. Evenly spread chicken salad onto 6 rounds, then top with remaining rounds. Roll cut edges in 2/3 cup toasted sliced almonds.
