Southern Twice-Baked Sweet Potatoes

  1. Preheat oven to 425°.
  2. Slice potatoes in half lengthwise. Scoop out pulp, reserving potato skin and pulp.
  3. Combine potato pulp, Hellmann's or Best Foods Real Mayonnaise, brown sugar, cinnamon, ginger and salt in medium bowl. Spoon pulp mixture into potato skins and arrange on baking sheet.
  4. Bake until heated through, about 10 minutes. Garnish, if desired, with chopped green onions..

*Use more if desired.
