Shrimp Salad with Potatoes

  • 1 lb. all-purpose potatoes, peeled and cut into 1/2-inch cubes
  • 1 lb. uncooked medium shrimp, peeled, deveined and coarsely chopped
  • 3/4 cup Hellmann's® or Best Foods® Mayonnaise with Lime Juice
  • 1/4 tsp. ground black pepper
  • 1 rib celery, chopped
  • 1 small onion, chopped
  • 1 carrot, chopped
  • 15 pimiento-stuffed olives, quartered


  1. Cover potatoes with cold water in large saucepot. Bring to a boil over high heat. Reduce heat and simmer until potatoes are almost fork-tender, about 8 minutes. Add shrimp and cook until shrimp turn pink, about 2 minutes; drain and rinse with cold water until completely cool.
  2. Combine remaining ingredients in large bowl. Stir in potatoes and shrimp. Serve, if desired, over shredded lettuce.
